If CARONIA's large funnel acted as somewhat of a sail, I can't imagine how this enormous stack affected the handling of PASTEUR! Odd too, the decision to use both quadrant and gravity davits.

Presumably because in this shot i.e. when she was first built for passengers, she clearly has 'stackable' boats, which of course cannot be used with gravity davits. I notice in the other shot of her in 1940 that by then she had full set of gravity davits.
