Were Brock's the only outfit who served-up this excellent 'take' on a fried-egg and fried bread or was it just a speciality on one ship? Unfortunately I can't remember which ship/s I had them on!

I mentioned them to a neighbour, (Rob Hayward) who was, (among many outfits he sailed with), a deck-officer in BI and I assumed, because THEY were Indian crew would also serve Summer-set eggs, at breakfast, but he'd never heard of them.

Please tell us how they are made. I scramble three eggs for breakfast and stir in a teaspoonful of chopped anchovy. It doesn't take much.

Always thought they were "Somerset Egg" and served as one of the options of "Egg to order" on Brocklebank ships. For the recepie just google "Eggs in a basket "

The way I do them, Robert, is to cut a hole in a slice of bread, (I use a stainless egg-cup), lightly fry one side of the slice, turn it over, break the egg, with the yoke filling the hole, spoon hot oil onto the white to 'set' it then, just before serving, I briefly turn the slice over just to 'set' any of the white which may not have cooked. Enjoy. Phil

Thanks Phil. A Danish lass once made me a "Pirate's Eye," which was a slice of toast with a hole at one side with the egg fried or poached in it, and the piece from the hole on the other side to represent an eye patch.

P.S. The hole was in the middle of the slice with the patch to one side on the plate.

J&J Denholm ships had it once in a while. Made it about a month ago... just for nostalgia. The middle piece fried... baked beans, bacon. Have not done it for years. Tasty for sure, but I don't think I will do it again in case the Doctor hears about it!
